Ingredients
For the Steak & Zucchini
- 1¼ lbs sirloin steak, cut into bite-sized cubes
- 4 medium zucchini, spiralized, or packaged zucchini noodles
- 1 tablespoon The Anointed Olive Ultra Premium Extra Virgin Olive Oil
- 3 tablespoons The Anointed Olive Butter Infused Olive Oil, divided
- 2 teaspoons minced garlic
- ¼ cup beef or vegetable broth
- 1 tablespoon minced fresh parsley
- 1 teaspoon fresh thyme leaves
- ½ teaspoon red pepper flakes, optional
- ¼ cup The Anointed Olive Sicilian Lemon White Balsamic Vinegar
For the Marinade
- ¼ cup low-sodium soy sauce
- 1 tablespoon The Anointed Olive Ultra Premium Extra Virgin Olive Oil
- 1 tablespoon The Anointed Olive Baklouti Green Chili Fused Olive Oil
- ¼ cup The Anointed Olive Sicilian Lemon White Balsamic Vinegar
- Freshly cracked black pepper, to taste
Directions
- Marinate the steak. Combine soy sauce, EVOO, Baklouti Green Chili Fused Olive Oil, Sicilian Lemon White Balsamic and black pepper in a bowl. Add the steak and toss to coat. Marinate for at least 15–20 minutes while preparing the remaining ingredients.
- Sear the steak. Heat 1 tablespoon EVOO in a large skillet over high heat. Remove the steak from the marinade, reserving the marinade. Arrange steak in a single layer and cook for 3–4 minutes, stirring occasionally, until browned. Work in batches if necessary to avoid overcrowding.
- Add the garlic butter flavor. Add 2 tablespoons Butter Infused Olive Oil and the garlic. Cook for another 1–2 minutes, tossing the steak to coat. Transfer steak to a plate and set aside.
- Make the sauce. In the same skillet, add the remaining 1 tablespoon Butter Infused Olive Oil, Sicilian Lemon White Balsamic, red pepper flakes, broth and reserved marinade. Bring to a simmer and cook for 2–3 minutes, stirring regularly.
- Cook the zucchini noodles. Add the zucchini noodles and toss for 2–3 minutes, just until tender. Stir in the parsley and thyme. If the zucchini releases excess liquid, allow the sauce to reduce for another minute.
- Finish the dish. Return the steak bites to the skillet and toss with the zucchini noodles and sauce. Heat for about 1 minute and serve immediately.
Notes
Sirloin works beautifully, but tenderloin, ribeye, flank or strip steak can also be used.
Zucchini releases quite a bit of moisture. For firmer noodles, lightly salt the spiralized zucchini, let it sit briefly, then rinse and drain thoroughly before cooking.
Dry white wine may be substituted for the broth.
