Whole Wheat Waffles with Fresh Fruit

Ingredients

  • 2 large eggs
  • 2 cups whole wheat flour, plus 1 teaspoon for coating the fruit
  • 4 teaspoons baking powder
  • ¼ teaspoon fine sea salt or table salt
  • 1¾ cups milk
  • ½ cup The Anointed Olive Hojiblanca Extra Virgin Olive Oil, or a flavored olive oil of your choice
  • ½ teaspoon pure vanilla extract
  • 1 tablespoon honey
  • 1 cup fresh strawberries or your choice of fruit, chopped

Instructions

  1. Preheat the waffle maker. Set your waffle maker to medium heat, following the manufacturer’s instructions.
  2. Beat the eggs. Using a stand mixer or electric mixer, beat the eggs on high speed for about 1 minute.
  3. Add the dry ingredients. Sift the whole wheat flour, baking powder, and salt into the beaten eggs. Add any bran remaining in the sifter back into the bowl.
  4. Mix the batter. Add the milk, olive oil, vanilla extract, and honey. Mix just until combined, avoiding overmixing.
  5. Fold in the fruit. Toss the chopped fruit with the additional 1 teaspoon of flour, then gently fold it into the batter.
  6. Cook the waffles. Add the amount of batter recommended for your waffle maker, leaving room for it to spread. Close the lid and cook according to the manufacturer’s instructions until golden and cooked through.
  7. Serve warm. Serve immediately, or place the waffles on a baking sheet in a 275°F oven while cooking the remaining batter.
