Tender, flavorful chicken marinated in creamy yogurt, Garlic Infused Olive Oil, fresh lemon and Oregano White Balsamic. Grill it on skewers or cook it in the oven for an easy Mediterranean-inspired meal.
Ingredients
Chicken
- 1½ pounds boneless, skinless chicken breast, cut into 1-inch pieces
Marinade
- 1 cup whole-milk plain yogurt
- ⅓ cup The Anointed Olive Garlic Infused Olive Oil
- Juice of ½ lemon
- 1 tablespoon The Anointed Olive Oregano White Balsamic
- 2 teaspoons kosher salt
- Freshly ground black pepper, to taste
Directions
- In a bowl, whisk together the yogurt, Garlic Infused Olive Oil, lemon juice, Oregano White Balsamic, kosher salt and black pepper.
- Add the chicken and marinade to a zip-top bag or covered bowl. Refrigerate for at least 4 hours or up to 24 hours.
- When ready to cook, thread the chicken onto skewers if desired.
For the Grill:
Prepare the grill for indirect cooking. Place the chicken on the grill and turn approximately every 2 minutes until browned on all sides and completely cooked through, about 8 minutes total. Remove from the grill, cover loosely and allow to rest briefly before serving.
For the Oven:
Preheat oven to 450°F. Arrange the chicken on skewers or in a single layer on a greased broiler pan or oven-safe wire rack set over a baking sheet. Cook on the upper rack for approximately 6 minutes. Turn the chicken, then broil for approximately 4 minutes, turning as needed to brown the chicken evenly. Cook until the chicken reaches an internal temperature of 165°F.
Serve immediately.
