Start With Extra Virgin Olive Oil
If you are trying to buy better olive oil, the first thing to look for is extra virgin olive oil.
Not “pure olive oil.”
Not “light olive oil.”
Not “olive oil blend.”
Extra virgin olive oil is the highest quality grade and the least processed. It is mechanically extracted without excessive heat or chemicals, which helps preserve flavor, aroma, and nutritional benefits.
The difference in taste is dramatic.
Lower-quality oils are often heavily refined or blended to create consistency and longer shelf life. That is part of the reason many grocery store oils taste flat or generic. They are designed to sit on shelves for extended periods, not necessarily to taste vibrant and fresh.
Freshness Matters More Than Price
One of the biggest misconceptions about olive oil is that all olive oil ages the same way wine does. It does not. Olive oil is closer to fresh juice than people realize. The fresher it is, the better it tends to taste. That is why harvest dates matter.
A bottle may technically still be within its expiration window and still taste tired, dull, or stale. Fresh olive oil should smell alive. Depending on the variety, you might notice notes of green herbs, almond, tomato leaf, fresh-cut grass, artichoke, or even green banana.
Old olive oil loses those characteristics over time, especially if it has been exposed to heat, light, or oxygen for too long. That is also why quality olive oil usually comes in dark glass bottles or tins instead of giant clear plastic containers sitting under fluorescent grocery store lights for months at a time.

Learn to Ignore Fancy Labels
Olive oil packaging can be incredibly misleading.
A label can say “imported,” “Mediterranean blend,” or have a beautiful painting of rolling hills in Tuscany without telling you anything useful about the oil inside the bottle.
What you actually want to look for is transparency.
Good producers are usually proud to tell you:
- Where the olives were grown
- When they were harvested
- What varieties were used
- How the oil was produced
If the front label tells you a romantic story but the bottle cannot tell you when the olives were harvested, that should probably raise a few questions.
Real Olive Oil Has Personality
