Balsamic vinegar has been enjoyed for generations for its distinctive balance of sweetness and acidity. Beyond its flavor, balsamic vinegar contains two components of particular scientific interest: acetic acid, which is characteristic of vinegar, and grape-derived polyphenols naturally present in balsamic vinegar.
Research into balsamic vinegar and vinegar more broadly has explored potential effects on blood sugar response, cardiovascular health, oxidative stress, satiety and weight management.
Blood Sugar & Insulin Response
One of the best-supported areas of vinegar research involves what happens to blood glucose after eating.
A systematic review and meta-analysis of clinical trials found that vinegar consumption significantly reduced post-meal glucose and insulin responses. Acetic acid is believed to be an important contributor to this effect.
This benefit isn't unique to apple cider vinegar. Acetic acid is a defining component of vinegar, including balsamic vinegar, so research examining the metabolic effects of vinegar and acetic acid is relevant when discussing balsamic.
This does not mean balsamic vinegar is a treatment for diabetes. Rather, research supports vinegar's potential role in moderating the body's glucose and insulin response following a meal.
Polyphenols & Antioxidant Activity
Balsamic vinegar brings something else to the table: it begins with grapes.
Scientific analysis of balsamic vinegars has identified numerous phenolic compounds. These naturally occurring plant compounds are of particular interest because of their antioxidant activity.
Research comparing different fruit vinegars has demonstrated substantial phenolic content and antioxidant activity in balsamic vinegar.
Antioxidants help protect cells against oxidative damage caused by free radicals. This gives researchers another reason to study balsamic vinegar beyond the effects associated with acetic acid alone.
What About Polyphenol Testing in Balsamic Vinegar?
Polyphenol testing for balsamic vinegar is still developing and is not yet standardized in the same way as the testing used for our Ultra Premium Extra Virgin Olive Oils.
But we're beginning to see something exciting.
Our supplier has started providing phenolic testing results for some of our balsamic vinegars, giving us additional information about the naturally occurring compounds present in the products we carry.
As testing continues to develop and more results become available, we love being able to share those numbers with our customers.
Just as we believe you should be able to see and understand the chemistry behind a quality EVOO, we welcome greater transparency and information about our balsamic vinegars.
These numbers aren't intended to make one balsamic flavor "better" than another. Testing in this area is still evolving. Instead, the results give us another piece of information that can help us better understand what's actually in the bottle.
Cardiovascular Health & LDL Oxidation
Balsamic vinegar's polyphenols have also been studied specifically in relation to LDL oxidation.
Researchers studying balsamic vinegar found that its polyphenols inhibited LDL oxidation in laboratory testing. The research also examined biomarkers associated with LDL oxidation following balsamic vinegar consumption in human participants.
Oxidation of LDL is involved in the development of atherosclerosis, making this an interesting area of balsamic-specific research.
Importantly, this isn't simply a health benefit being borrowed from research on apple cider vinegar. Researchers in this study were examining balsamic vinegar itself.
Satiety & Weight Management
Vinegar and acetic acid have also been investigated in connection with satiety, appetite and body weight.
Research has found that consuming vinegar with a meal may increase feelings of fullness. Other clinical research has investigated longer-term vinegar consumption and changes in body weight and metabolic markers.
A randomized study of adults with obesity found that daily vinegar consumption over 12 weeks was associated with reductions in body weight, BMI, visceral fat area, waist circumference and serum triglycerides compared with placebo.
This doesn't make balsamic vinegar a weight-loss product. It does, however, add to the research surrounding vinegar, acetic acid and metabolic health.
There's also a very practical advantage: balsamic vinegar adds significant flavor to vegetables, salads, marinades and other foods without requiring heavy sauces or dressings.
Balsamic Vinegar & a Healthy Diet
Sometimes the simplest benefit is one of the most useful:
Balsamic vinegar makes wholesome foods taste good.
Pair balsamic with extra virgin olive oil for a simple vinaigrette. Drizzle it over roasted vegetables. Use it in marinades. Pair it with fresh fruit. Add a splash to soups or sauces or use it as a finishing touch.
Balsamic vinegar fits naturally into a Mediterranean-inspired style of eating centered around vegetables, fruits, legumes, whole grains and healthy fats such as extra virgin olive oil.
Rather than thinking of balsamic vinegar as something that needs to be consumed by the spoonful for a particular health benefit, we prefer to think of it as an ingredient that can make eating well a lot more flavorful.
What Does “Balsamic Vinegar of Modena” Mean?
Origin matters when talking about balsamic vinegar.
Aceto Balsamico di Modena — Balsamic Vinegar of Modena — is a Protected Geographical Indication (PGI) in the European Union. The protected designation identifies balsamic produced in the Italian provinces of Modena or Reggio Emilia according to established production requirements.
There is also Aceto Balsamico Tradizionale di Modena — Traditional Balsamic Vinegar of Modena — a separate PDO/DOP designation with even more specific requirements governing its ingredients, production and aging.
The generic word balsamic by itself is not restricted exclusively to vinegar produced in Modena. The protected geographical designations are more specific.
At The Anointed Olive, our balsamic vinegars are sourced from Modena, Italy.
For us, origin, ingredients and production matter. Just as we encourage our customers to look beyond the words olive oil when selecting an EVOO, we believe it's worth looking beyond the word balsamic when choosing a vinegar.
The Bottom Line
Balsamic vinegar brings together the acetic acid characteristic of vinegar and naturally occurring grape-derived polyphenols.
Scientific research into vinegar and acetic acid has demonstrated effects on post-meal glucose and insulin response and has explored potential effects involving satiety, body weight and other metabolic markers.
