Extra virgin olive oil is a fresh food, and how you store it matters.
We talk frequently at The Anointed Olive about choosing fresh Extra Virgin Olive Oil, looking at the harvest date, understanding the chemistry, and buying a bottle size you'll actually use. But there's another important part of protecting the EVOO you bring home:
Keep it away from light.
A 2026 study published in the Journal of Food Composition and Analysis examined how filtration and light exposure affected extra virgin olive oil during 48 weeks of storage. The results offer another good reason to pay attention to where that bottle sits in your kitchen.
What Did the Researchers Find?
Researchers studied extra virgin olive oils under different filtration and storage conditions and monitored changes in their phenolic compounds over time.
According to the study, light exposure was the dominant factor associated with phenol degradation, accounting for 93.8% of the observed variation in degradation during storage.
The difference between oils exposed to light and those protected from it was substantial.
Over the 48-week study period, EVOOs stored under light exposure lost approximately 80% of their phenolic content. Oils stored in darkness retained significantly more of their phenols.
The researchers also evaluated the oils against the phenolic level associated with the European Food Safety Authority's health claim. Oils exposed to light fell below that level after approximately three months, while oils protected from light maintained qualifying levels throughout the 48-week study.
These results don't mean that every EVOO will lose phenols at exactly the same rate. Olive variety, initial chemistry, storage conditions, temperature, oxygen exposure and other factors can all influence how an individual oil changes over time.
What the study does reinforce is something much simpler:
Light matters.
Why Do Phenols Matter?
Phenolic compounds are naturally occurring components of extra virgin olive oil and contribute to both its sensory characteristics and its stability.
They're also one of the reasons we provide the biophenol level for every Ultra Premium Extra Virgin Olive Oil we carry.
Depending on the oil, phenolic compounds can contribute to some of the bitterness and pepperiness you experience when tasting a fresh EVOO. They're also associated with the antioxidant properties that make high-quality extra virgin olive oil so interesting from a nutritional standpoint.
Starting with an EVOO rich in these compounds is only part of the equation.
Protecting the oil after harvest matters, too.
Why Our EVOO Is Stored in Stainless Steel
If you've visited The Anointed Olive, you've seen the stainless-steel Fusti (tanks) lining our tables.
They aren't there just because they look good.
Stainless steel protects the oil from light while it's being stored in our tasting rooms. That allows us to keep our EVOO protected until we fill your bottle.
We also rotate between Northern and Southern Hemisphere harvests throughout the year so we're continually bringing in oils from the freshest available harvests.
But once that bottle leaves our store, how you store it at home becomes important.
Where Should You Keep Your Olive Oil?
You don't need special equipment at home. A few simple habits can make a difference:
- Keep it away from direct sunlight. A sunny windowsill is one of the worst places for EVOO.
- Don't display it under bright kitchen lighting. Your olive oil doesn't need to be decorative.
- Choose a cool, dark cabinet or pantry that's convenient enough that you'll actually use it.
- Keep it away from the stove and other heat sources.
- Close the bottle after every use. Oxygen is another enemy of olive oil quality.
- Buy the amount you'll actually use. A giant bottle isn't a bargain if it spends a year sitting open in your kitchen.
You don't have to treat your EVOO like a science experiment. Just remember:
Dark. Cool. Closed. And used.
Freshness Doesn't Stop When You Buy the Bottle
There's a tendency to think that choosing a high-quality extra virgin olive oil is the end of the process.
It isn't.
Harvesting, processing, testing, transportation and storage all play a role in the quality of the oil that reaches your kitchen. Once you bring it home, proper storage helps protect what you've purchased.

We want you to know what's in your bottle.
And then we want you to use it while it's fresh.
Because great EVOO shouldn't be saved for a special occasion.
