Herb Chicken


  • 2 lbs or 8 boneless, skinless chicken thighs
  • 1/2 teaspoon each Salt and Pepper
  • 1 Tablespoon olive oil
  • 1 Tablespoon Organic Dried Garlic Flakes
  • 1 Tablespoon Italian Seasoning
  • 1/2 cup sherry or a dry red wine
  • 1/2 cup chicken broth - fat free and low sodium
  • 1 cup frozen peas


  1. Lightly season the chicken on both sides with Salt and Pepper.
  2. Add olive oil to a large skillet or shallow dutch oven, heat to medium high.
  3. Cook chicken for about 5 minutes, turning halfway through or until chicken becomes golden brown and crispy on both sides.
  4. Remove chicken from pan and keep warm.
  5. Add Organic Dried Garlic Flakes, sherry/wine and chicken broth to the pan and cook, scraping the bottom of the pan until sauce begins to boil.
  6. Reduce heat to medium low and add Italian Seasoning, stir to combine.
  7. Return chicken to the pan and add peas. Cover and cook another 20 minutes until chicken is tender and cooked through.
  8. Serve warm.
